Winter Warmer Chili w/Beans
I made this recently on a cold, wet and wintery 🥶day in Virginia. The weather just called for a big pot of chili with beans.
Ingredients
- 🍔2lbs Lean Burger
- 🧅1 large sweet onion diced
- 🌶3 large jalepenos diced
- 🌶4 serrano peppers diced
- seed peppers if desired
- 🌶2 cans 4.5 oz, chopped green chiles
- 🍅2 cans Rotel any variety will do
- 🫘2 cans chili beans
- 🫘1 can black beans
- 🫘1 can kidney beans
- 🫘1 can small red beans
- 🔸Black pepper
- 🔸Salt to taste
- 🔸Chili seasoning
- Homemade or a packaged I like French’s Chili-O if I don’t wing it out of the spice cabinet. I favor a cumin forward chili.
Instructions
- Using Medium/Medium High heat, start cooking the burger. Add some chili seasoning as you break up and stir the burger. Layering in some flavor here.
- When the burger is about half cooked add the onions and peppers. Stir occasionally until meat is thoroughly cooked.
- Add the canned goods.
- Use water, beef, vegetable or chicken broth to create desired thickness.
- Add additional chili seasoning to taste.
- Bring to just boiling and reduce heat simmer.
- Simmer for 30-45 minutes before serving. Simmer longer if desired stirring occasionally.
Notes
For a smaller pot cut everything in half, no need to be exact.
This is chili, there are no rules:
🔹Guinness stout, powdered cocoa, a dash of cinnamon, etc. are all fair game.
🔹Red or green bell peppers, carrot sticks all go well in a pot.
🔹Serve over Fritos, saltines, oyster crackers, Cheez-its or spaghetti.
🔹Add shredded cheese, sour cream, chives, chopped onions.
🔹Use a different protein. Have fun with it. Enjoy!
