

Blackened Halibut
Easy, low effort prep. This seasoning will complement most any protein or vegetable. Search for different recipes and try something that catches your attention. This seemed to be the most common mix of ingredients.
Equipment
- Cast Iron griddle or skillet
Ingredients
Blackening Seasoning:
- 2 tbls smoked or hungarian paprika
- 1 tbls cayenne powder +/- to adjust heat
- 1 tbls onion powder
- 1 tsp sea salt
- 1 tsp ground black pepper
- 1 or 2 tsp garlic powder
- ½ tsp dried thyme
- ½ tsp dried basil
- ½ tsp dried oregano
Other:
- 3 pieces Halibut I used frozen vacuum packed, fresh is always better but not always convenient.
- 3 tbls Butter melted
- 2 tbls Avocado/Vegetable Oil
Instructions
- Combine seasoning ingredients.
- I coated my 19th century cast iron griddle with avocado oil and put it in the oven while it was preheating to 475⁰F.
- Slather the fish with melted butter and liberally coat with the seasoning on all sides.
- When griddle is screaming hot place fish on griddle in oven.
- Turn after about 3 minutes and cook another 2-3 minutes.
- Fish is done when it flakes easily with a fork.
Notes
Oven method can be used with any cast iron or can be cooked on stove top with skillet preheated medium-high to high heat.
