
Hamburger Steaks in Scratch Brown Gravy with Halved Red Potatoes

- FOR THE BURGER PATTIES:
- 1.5 lbs ground beef 80/20
- 2 tbsp soy sauce
- 1 large egg
- 1/2 cup breadcrumbs
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- FOR THE POTATOES & GRAVY:
- 3 tbsp reserved bacon fat or oil/butter
- 1 large yellow onion sliced into thin half-moons
- 8 oz cremini or button mushrooms sliced
- 1 bag 1.5 lbs small red potatoes, cut in half
- 3 tbsp all-purpose flour
- 3.5 cups beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt and black pepper to taste

- In a large bowl, gently combine the ground beef, soy sauce, egg, breadcrumbs, 1 tbsp Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Shape into 4 oval patties and press a slight dimple into the center of each.
- Heat 3 tablespoons of bacon fat in a large heavy skillet over medium-high heat. Add the patties and sear for 3–4 minutes per side until a dark crust forms. Remove patties to a plate (they will finish cooking later).
- Drop heat to medium and add the sliced onions and mushrooms to the skillet. Sauté for 8–10 minutes until soft and golden, scraping up the browned beef bits stuck to the bottom of the pan.
- Sprinkle 3 tablespoons of flour over the onions and mushrooms. Cook and stir constantly for 2 minutes to cook out the raw flour taste.
- Slowly whisk in the 3.5 cups of beef stock until smooth, then stir in 1 tbsp Worcestershire sauce and 1 tsp Dijon mustard. Drop in the halved small red potatoes and bring to a boil.
- Reduce heat to medium-low, cover with a lid, and simmer for 20 minutes until the red potato halves are fork-tender.
- Uncover the skillet and nestle the seared burger patties (plus any plate juices) back into the bubbling gravy alongside the potatoes. Simmer uncovered for 8–10 minutes until the gravy thickens and the patties are cooked through.
