Cheat codes are substitutes that can save time while sacrificing very little in quality. Instead of making your own taco seasoning use a pack of your favorite prepared mix. Would you prefer to skip dicing onions and tomatoes? Then look for the fresh salsa in the produce section instead. A bag of premade slaw mix is a great short cut for shredding cabage and you can make slaw with the left overs. Not everything has to be made from scratch and if you use the right substitutes no one will be the wiser but you. I've called out the cheats in the ingredients list.

Equipment

  • 1 Zip lock bag
  • 1 skillet
  • 1 slotted spoon
  • 1 mixing bowl

Ingredients
  

Ingredients:

  • 6 small corn or flour tortillas
  • 1 lb white fish cod, halibut, tilapia
  • 1 tbsp avocado or olive oil
  • 1 tbsp butter salted or unsalted
  • 4 limes

Taco Seasoning:

  • 2 tsp chili powder
  • 1 ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp or more crushed red pepper or cayenne to taste
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ¼ tsp black pepper
  • Cheat Code: 1 package of your favorite premade taco seasoning

Toppings:

  • 1/3 small red cabbage shredded
  • Cheat Code: prepacked slaw mix
  • 1 cup shredded sharp cheddar cheese
  • 1 cup Cotija cheese crumbled (or feta)
  • 1-2 roma tomatoes diced
  • ½ small red onion diced
  • 3 tbsp chopped cilantro
  • Cheat Code: fresh salsa premade found in produce section

Sauce:

  • 8 oz sour cream
  • ½ cup mayonnaise
  • ½ lime juiced
  • 1 tsp garlic powder adjust to taste
  • 2-5 tbsp Sriracha sauce to taste

Instructions:

    Sauce:

    • Prepare the sauce at least 2 hours in advance by mixing all ingredients until smooth. Adjust with more Sriracha for extra heat if desired.

    Fish Preparation:

    • Dice the fish into 1-inch cubes.
    • In a ziplock bag, combine the fish with the juice of two limes and taco seasoning. Gently mix to coat the fish evenly. Marinate in the fridge for at least one hour.

    Cooking:

    • Heat oil in a skillet over medium-high heat until shimmering. Add butter.
    • Using a slotted spoon, add the fish to the skillet. Allow it to brown before gently mixing to ensure thorough cooking until flaky.
    • Remove fish from skillet and place on a plate lined with paper towels to drain excess oil.

    Assembly:

    • Microwave the tortillas in a stack for 20-30 seconds until warm.
    • Build your tacos: spoon fish onto tortillas, add desired amount of cheeses, onions, tomatoes, cilantro (or fresh salsa), and drizzle with sauce.
